Happy Easter and/or Happy Sunday!
A few hours ago, there was an earthquake in Baja California (Mexico) that we totally felt! I’ve been in earthquakes before but I think this was the biggest and longest yet (TWSS). It was crazy because at first we thought it was just our upstairs neighbors moving around, but then we realized it was an earthquake and Mitch and I just kinda looked at each other like, “hey! Earthquake!” and then the shaking got more intense and I was wondering if I should go stand in a doorway like we learned to do during earthquake drills.
It was over soon enough, though, so I say it was just enough to make sure we were all paying attention on this holy afternoon. Earthquakes aren’t that big a deal where I live (knock on wood) but it is a little unnerving when everything is shaking around. Some items in my pantry got knocked down, and I’m taking that as a sign it’s time for a pantry clean-out.
I haven’t done much innovative cooking recently (unless scrambled eggs and “yogurt messes” are innovative), so I thought I’d give you an update on the last few days in the Healthy Twists life (you’ll see the irony in that soon). Thursday was Mitch’s birthday so we went to his beloved Hash House for dinner. I went completely uncharacteristic for me and ordered one of the least healthy things on the menu…and then had leftovers for dinner on Friday. I’ll probably never (ever!) again eat bacon-stuffed waffles and sage-fried chicken with a maple reduction, so I thoroughly enjoyed it. Mitch has been raving about this dish for years so I had to see what the fuss was about. The lighting was pretty dark at the restaurant but um, I think you get the idea.
Trust me, it was good. Worth the heartburn.
Then last night we went to Mitch’s mom’s house for dinner, complete with a homemade chocolate cake that is now staring (literally) me in the face in the kitchen and…yeah…I wasn’t kidding when I mentioned some “indulgent” eating times ahead (p.s. I don’t like the connotation of words like “indulgence” or “splurge” but there we are). But you know, the more unhealthy I eat, the more my normal healthy eating habits make me really happy if that makes any sense.
Before I scamper off to finish my laundry and make dinner (I’m thinking grilled asparagus and a salmon burger…oh and probably a slice of that cake…) I wanted to give a little shout-out to my friend Martha who started her own home-catering business called ArtesanaHCE! I just love people with that entrepreneurial spirit and the guts to become self-employed. I don’t think I could ever do that…although, who the heck knows
Martha invited me over after work one night last week to play around in WordPress (you know, since I’m such an expert and all) because she’s working on her blog and her website. And of course, I had to sample some of the items on her menus.
She made me chips (yes, she made the chips!) and guacamole and crostini with a mushroom pate (meat-free, because real pate is gross). I couldn’t believe how tasty I found the pate, given that I don’t like two of the main ingredients, mushrooms and brie cheese! That girl knows her stuff.
Oh so good. Not to mention I’m beyond jealous of the gorgeous natural light at Martha’s apartment. Congrats on the new venture, Martha!
Questions of the day/evening/weekend:
1. What’s one thing you’re looking forward to this week? I have my grad school interview on Friday, so that’s something important/exciting. I’ll know soon after that if I got into the program or not. Wish me luck!
2. Have you ever been in any “natural disaster” type thing? Like I said, I’ve felt a handful of earthquakes in my day, but nothing big. Blizzards were way more scary to me, when I was in college in snow country.

Glad to hear that you are okay from the earthquake. I’ve been in hurricanes. Nothing huge, but I have been in them.

Bacon stuffed waffles?? I’m so there. That sounds incredible and totally worth the heartburn
And homemade chips sound just as good!
Good luck at your interview! This week I’m actually looking forward to going back to work… weird…
I’ve been in tons of blizzards, but the worst are ice storms. They are way more dangerous and do a lot more damage. Happy the earthquake wasn’t anything huge!

I think I was driving so I didn’t feel the quake but I have felt several aftershocks.

great blog! I found it funny how so many DIDNT feel the earthquake. I went to my inlaws for easter and I they didn’t feel it, even though they live down the street from us and our lamps were rocking!
