Happy Last Day of 2009!
My week off is not nearly as relaxing (meaning, not nearly enough TV time) as I was hoping but I have been cooking and exercising, which were two things I wanted to do as much as possible without that pesky job getting in my way. Right now I’m mid-prep for tonight’s dinner (fresh spring rolls…delicious and healthy yet a bitch to make!) because we are going to see Avatar in IMAX 3D in a few hours and we aren’t going to want to spend an hour wrapping spring rolls when we return.
Tonight, we’re going over to Mitch’s friends house for a low-key night. I hope we can spend the night, because drunk drivers freak me out. I mean, I don’t like driving late at night on a normal weekend, and New Year’s Eve? No thanks! (edited to add: we might stay home after all. Oh, the excitement! Oh well whatever we do will be fine with me)
Last night, my best friend came over for a girls’ night which Mitch was at the Holiday Bowl with his dad. Mitch isn’t a fan of whole wheat pizza crust, nor does he like the Boboli brand, so I took advantage of a true make-your-own pizza night (well, I could have made the dough, but that would be baking and baking scares me). I was actually impressed by the nutrition stats and ingredient list for the crust.
We used Sargento reduced fat Italian blend cheese, organic pizza sauce, and a host of vegetables (and pineapple for mi amiga, which I wasn’t feeling last night). The nice thing about starting from “scratch” is that I can put at little cheese and as many vegetables on my half as I want.
And almost an entire fresh jalapeno. I like to live on the edge.
Our pizza came out really good, and REALLY filling! I ate 1/4 of the pizza and it was plenty.
Next time, I’ll try even less cheese. Or none at all? I kinda think it’s no longer pizza at that point. It’s flatbread with toppings. If you can’t tell, this is an appetizer-sized plate. Or is it called a salad plate?
We washed down our pizza with some wine that was left at the condo when we had our Christmas party. I am not a big red wine drinker, and I liked this a lot. It was very drinkable, which is my main requirement for red wine (or white for that matter).
I had about two glasses, which made today’s run a little less than pleasant (well that and the fact that I was wearing a fleece and it was probably 75 degrees, because I’m smart like that) but I did 4 miles anyway. Go me!
Time to get ready for the movie…it’s sold out (we bought out tickets online yesterday) so we have to get there early to get seats. I was going to post my food finds of 2009 and goals/resolutions for 2010, but this post is getting long enough so that’ll have to wait. Maybe tomorrow…depending on how I feel after tonight
What are your plans for tonight? Please, no matter what you do, be safe! Avoid the roads if you can at all because even if you are careful…other people might not be and that’s just scary!

I hope you had a nice and relaxing evening. Nick and I had a low key evening too, as many of his friends ended up going some place else, and we were pretty much the only ones, along with a couple other of our friends, at his friend’s sports bar. Ok that sentence made no sense, but it was a good time!
That pizza looks fantastic. I love Boboli whole wheat crust. IT’s such an easy meal to prepare, and always tasty.

looks like a fun night – i have totally done a cheeseless pizza before – use sundried tomatoes or caramelized onions and you won’t even miss it! happy new year!
