Spicy Whole-wheat Cornbread

Ingredients
  • 1 cup whole-wheat pastry flour
  • 1 cup cornmeal
  • 3 tablespoons agave syrup
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 container (5.3 oz) plain Oikos (or other nonfat Greek yogurt)
  • 2 eggs, beaten
  • 1 4-oz can diced jalapenos (hot or mild)
Directions
  1. Preheat oven to 375 degrees F. Lightly grease an 8×8 baking pan.
  2. In a large bowl, mix flour, cornmeal, baking powder/soda and salt.
  3. Stir in yogurt, agave, chilies and eggs.
  4. Do not over mix, stir only until well blended. Pour batter into prepared pan.
  5. Bake in preheated oven for 20 minutes or until center of the bread springs back when gently pressed.
